New Mex Enchiladas

Ingredients, makes 4 healthy servings

  1. 8 corn tortillas
  2. 3 c. red enchilada sauce
  3. 1 lb. lean ground beef
  4. 3 c. grated cheddar cheese
  5. 1/2 c. sliced black olives
  6. 4 c. shredded lettuce, red-green cabbage
  7. 4 eggs
  8. guacamole and sour cream to taste

Sauce. Brown ground beef and add enchilada sauce, simmer for 1/2 hour.

Assembly. Heat 4 plates and put 1 heated tortilla in the middle of each plate. Top each tortilla with 1/4 c. sauce, sprinkle with cheddar cheese and olives. Put plates in oven to melt cheese. After melting cheese remove form oven and add another layer of tortilla, sauce, cheese, and olives. Put plates in oven to melt cheese. After melting cheese remove from oven and top with the last of any sauce, cheese or olives that are remaining. Return to warm oven and fry 4 single eggs ( soft and over easy). Remove plates from oven and top each with an egg. Serve with lettuce and cabbage over all and garnish with guacamole and sour cream. Enjoy and take a walk after dinner.
